Alimentación escolar en el niño celiaco

Celiac disease (CD) is defined as a permanent intolerance to gluten in wheat, barley, rye and oats probably occurs in genetically predisposed individuals, characterized by an inflammatory reaction.

The objectives of this work are: knowledge of safe and unsafe in celiac children importacia food and adequate information on disease management.

There has been a literature review on the current state of scientific production nurse about celiac disease in childhood, in the following databases: Cuiden, Cochrane, Liliacs and Pubmed.

According to the studies found, it estimated Europeans and their descendants prevalence of 1%, being more common in women with a ratio 2: 1.

The realization of a specific plan child care based on patient health education to children, parents and educators, about diet, is essential for good control of the disease.

Among the conclusions that have been carried out with this work is the key treatment is health education, children, family and educators are informed with food safety should and should not eat.
